chocolate toffee bars


This recipe should come with a warning: These are addicting! A friend at my first job as an OT gave me this recipe after she shared her delicious toffee at a holiday party.

Chocolate toffee bars

1 cup sugar
1 cup butter
1 sleeve of saltine crackers
chocolate chips (about half a bag)

For ease of clean-up, line a jellyroll pan with foil. Lay the crackers on top of the foil in even rows.

Melt the butter and sugar together in a medium pot on the stove on medium heat. Cook it until it begins to thicken. Make sure the sugar gets completely combined with the butter or you will end up with this:
The grainy sugar still tastes good, but isn't exactly what you want to share. It should be smooth. Pour the smooth butter/sugar candy over the crackers evenly.

Place the pan in the oven (preheated to 350) and cook until bubbly, about 8-15 minutes.

Remove from oven and sprinkle chocolate chips over the top. If you want a thick chocolate layer, sprinkle more.

The chocolate melts quickly. Spread the melted chocolate evenly over the top. 

Set in a cool place to harden. Break or cut apart. They break fairly easily into squares where each cracker is separated, but we cut some into triangles this time for a pretty presentation.

Variations:
The original recipe called for white sugar, but we have used brown sugar and succanat and they all taste delicious.
The chocolate layer can be melted candy bars, white chocolate, whatever your favorite is.
You can top them off while the chocolate is still melted with a layer of chopped pecans, toasted coconut, really anything here.

  1. We made these a couple of weeks ago and I was surprised at how delicious (and sinfully EASY) they were to make.

    Imagine my joy when I shipped a box of presents south for Christmas and got home from the PO to discover I'd forgotten to put in the two boxes of chocolate cracker toffee we'd made :0) More for us!!

    I second your command to "share" - these are a little addictive...
