Squash Recipe Round-up

Summer squash is my favorite vegetable, so we covered about a third of our garden with squash plants. They are growing, and we have already picked a few of them. I asked a few friends to share recipes of how they prepare squash, and received a variety of options to try.


My husband picks on my Southern style squash which is cooked down in an iron skillet and calls it squish which describes the end product (it is delicious.) He taught me his technique which would be appropriate to serve as a side dish with a gourmet meal. His favorite seasoning is Cavender's All Purpose Greek Seasoning, and he often adds it to noodles and vegetables. It is spicy and peppery. He fries sliced squash (about 1/8 inch thick) in butter, sprinkles it with Cavender's and Parmesan cheese, and the whole family enjoys it. I adapt his recipe just a little when I make it and add all of the sliced squash to the skillet at once, sauteing them together instead of preparing each slice. The kids like it both ways.

Another family favorite is my Granny's recipe for squash casserole which I'll share with you after I make it again.

My mom and a friend both shared that they like the tiny new squash cut up and added to fresh salad. Hindy at Confident Cook Hesitant Baker shared a colorful Kale and Butternut Squash Salad and explains how to massage kale so it can be eaten raw. She showed how to prepare those two ingredients in a completely different way in her Butternut Squash & Kale Lasagna.

The Appetizer Chick shared Curried Butternut Squash and Sweet Potato Soup Shots which can even be prepared ahead and then frozen.

When Wren's son was ten, he created what is now one of their family's favorites: Jackson’s Amazing Fettuccine with Sauteed Squash and Parmesan. That looks like a meal my kids will enjoy. 

Simply Sherryl shared her Slow Cooker Squash Medley which looks like it would be perfect for a rainy day or to prepare before a busy day. She also shared this encouragement about How to Plant Your Garden.

Jenn at Treasuring Life's Blessings shared a few of her recipes including stuffed zucchini roasted zucchini and zucchini salad, and this layered zucchini lasagna that I want to try soon. Search her blog for even more, because she said she makes relish and pickles and freezes squash, too. 


My friend Lynn shared a picture of fried squash on Facebook and seemed surprised when I told her I'd never breaded and fried it before. Kirsten at Farm Fresh Feasts shared eleven different ways to prepare squash that have inspired me to try change the way I think of squash. Several desserts are shared, too, which reminds me of the Deceptively Delicious cookbook. She also includes tips for freezing zucchini in the waffle recipe notes.
