Valentine's Day treats

Often my children shop with me, but I went shopping by myself early Tuesday morning to get the ingredients we would need for a special Valentine's surprise. My children and I enjoy making treats for my Grandparents, but as both of them are diabetic we have to change recipes up a bit so they can enjoy them. Heather likes to make a layered pudding pie, and Emily often shares her bread. For Valentine's Day, though, we made a few changes to a yummy cookie recipe. Equal's new Sucralose was perfect to try out in their cookies.


The kids helped me. Heather had the flour ready. Emily adjusted measurements so we could double the recipe then she helped me mix everything together.

After making two trays of almond cookies we added lemon zest and lemon juice to change up the last tray.  I have made recipes for my Grandparents before using Splenda and this seems comparable. Neither of the products brown the same way as sugar, but with these cookies the whole wheat flour helped them look a little browner than they would with white flour. It was easy to scoop the sweetener from the canister and less messy than the bagged product I have cooked with before. All of the cookies turned out delicious, though my Grandpa preferred the almond ones. Somehow I missed getting a picture of his cards. The kids each made pictures for him and for Granny, and we brought them the lemon and almond cookies and their own Equal Sucralose canister.
