Simple and Delicious Fruit Salad

   Devo Olive Oil company is again sponsoring our A Book and A Bite Facebook Party, so I'm sharing my second creation with their yummy Peach Balsamic Vinegar.

     I poured about 1/8 cup of the peach over 1/4 cup of sugar, stirred it, then let it sit to dissolve a bit more. What surprised me was how good just the combination of those two ingredients tasted when I sampled it. The sugar cancels out some of the sharp vinegar taste, and the peach scent was evident in this.

     We still have apples and I found grapes for .99 cents a pound this week so I created a delicious fruit salad. Exact amounts aren't necessary for this, just use what you have. I combined about 3 cups of grapes, sliced in half lengthwise, 4 apples cut into small pieces, and 1 cup pecans, broken into small pieces. Add 3/4 cup sour cream to the sugar vinegar mixture, then stir in fruit and nuts to coat. When the girls and I tasted this we decided it was just a bit too tart, so we added another 1/2 cup Equal Sucralose and stirred again. Perfect! My parents shared dinner with us and everyone enjoyed this salad.
