Blueberry Morning

     With a symphony of distant thunder, my son suggested we pick the blueberries "lightning fast" this morning.
If you look really closely, you can see the bird nest in the top of this bush.
     We have been picking berries for several weeks now, and the best ones are still the ones eaten right from the bush.
We changed up the Basic Whole Wheat Pancakes recipe from the Bread Beckers Recipe Collection.

Ingredients:
3 cups freshly milled flour
1 dash salt
1 tsp. baking powder
1/3 cup coconut oil
4 eggs
2 1/2 cups milk
1 cup vanilla yogurt
1 tsp. vanilla
4 cups blueberries

     Combine all ingredients except blueberries. One of my sweeties doesn't like blueberries (which means that she picks the most!) so I prepared some plain pancakes for her then stirred about 1 cup of blueberries into 2 cups of mix at a time for the rest of us.
We also enjoyed blueberry sauce made by simmering 1/3 pot of blueberries in 1/2 inch of water and 2/3 cup of sugar.
     The kids wanted to try purple pancakes so for the last ones instead of stirring berries into the batter, I mixed in some of the syrup. I should have added more flour, too, but didn't think of it at the time. They turned out very soft and very sweet.
We enjoyed our blueberry brunch to the symphony of raindrops on the roof.

  3. Shelley, that sauce is thanks to you showing me how to make it. Thank you! Powpow came over today. When he saw some of the berries that we picked, he asked how many it would take to make a pie. I heard that hint and need any tips on making mini ones.

  5. Jill, We freeze a lot of the ones that we pick. Most of the time the frozen ones work well in our recipes; the majority of them end up in smoothies.

    This totally reminds me of Blueberries for Sal. Great book for this time of year. ;-)
